Lunchtime

 

Does this look like the lunch of someone who is trying to lose weight? This a typical lunch that I pack when I head off to school to sub.

It actually is more than a lunch it’s some snacks too!

There of course is my favorite, broccoli in the green container, taco soup, pumpkin pie, lemon fluff, a vita top ( AKA  giant chocolate cookie ), Curves granola bar, homemade chips from no points tortillas, water, and punch. If I eat it all it is 6-7 points. ( The lemon and chips are supposed to be free but I always count them for something) the Broccoli is free!

This is usually my breakfast too. I eat something between 9:00 and 10:00 because it is just to early to eat for me before school. Plus I don’t have time to eat this all at lunch and still get to visit! :)

Now this isn’t the exact what I take every day but I always try to keep it under 8 points so I have enough for the rest of the day. I like to save some for after school so I can have a bigger snack too.

I love to SNACK after school!

This obviously takes some planning but it is worth the effort to not be tempted to eat junk at work and still feel content.

I haven’t posted a recipe for a while so here is a new favorite!!

Chicken, Rice and Veggie Casserole!

3lbs California blend vegetables chopped up

2 cups of chopped celery

1 large onion chopped

Cook the veggies together till tender (not mushy)

Then add

3-4 cups of chicken ( I use 2- 13 ounce cans with broth)

4 cups of cooked rice

3 cans 98% fat free cream of chicken soup

1 can 98% ff cream of celery soup

¾ cup light or fat free mayo ( I use fat free Miracle whip)

1 ½ tsp salt

3/4 tsp pepper

If the mixture seems a little dry you may add more chicken broth.

Put in pan and let set an hour before you bake.

Bake at 350 for 45 minutes to an hour

( This makes a larger than 9x13 pan)

You may put crushed up potato chips on top.

1 cup = 3 WW points ( without the potato chips)

This is so Yummy that it is worth the extra prep time! I wish I had a picture but it never lasts long enough to get one! ( Didn’t that sound better than I forgot or was too lazy!)

Well I am off to make some crust less strawberry pie and broccoli for tomorrow!

  4. The recipe sounds great to me, but no way would my husband go for the vegetable part or the chicken. Oh, he'd eat it, but would say not to fix that again! He's much more a red meat and potato guy...oh well. By the way, I was wondering if you could post the recipe for your lemon fluff? I love lemon and something light would be perfect! Thanks~
