Back to Reality!

 

This is actually the third time today I have tried to post.

Sad Huh?

I started out whining about how coming back to reality after vacation is no fun.

Then I realized I should just be thankful I got to take a vacation.

So of course I had to scrap that draft.

Then I tried to write about how good I did in Florida eating and exercising.

That just sounded down right braggy.

So I have decided to just give a few highlights of my week.

1. I rollerbladed for the first time in my life. If I had a bucket list this would definitely be on it.

I don’t think this is bragging since it actually was very humbling (no I didn’t fall) But I did make my 17 year old daughter hold my hand and pull me up the small incline ramps to get on the sidewalk.

Thanks Tiff you were a great sport!

I loved it and hope to someday buy my own rollerblades that actually fit. Unfortunately no one took a pic :)

2. I played numerous rounds of Putt Putt at the free course at our resort. Great family time!

Now I am back in Indiana and even with the cold and reality of everyday life; School, work, and bills…

There is still no place like home!

Lemon Fluff / Lemon pudding

By request here it is….

This is one of my absolute favorites. Although I love lemon…. Lemon cake, lemon drops, lemon tootsie rolls the list goes on…..and on and on and I love this lemon recipe.

My mom actually makes it the best. She is more patient than me and waits until it is cool enough to add the cool whip. I am learning to be more patient.

I add a dollop of Free cool whip right before I eat it! If I really am in a pretending mood I think it is just as delicious as cheesecake. :)

LEMON FLUFF/PUDDING

1 vanilla SF FF cook & serve pudding mix

2 ½ cups water

Mix and bring to boil. Remove from heat

Add and mix well 1 SF lemon jello and

1 -2 T lemon juice

1 T lemon zest (optional) (I never use this)

Let cool and add 1 cup FF Cool Whip

**One of my very favorites although I don’t mess with the zest!

If you add the cool whip and it is too warm the cool whip just goes to nothing. So make sure the lemon mixture is completely cooled before you add the cool whip free. Put you pan in ice water to cool it down quickly.

Well I thought I would get one last post in before we leave for the sunny ( hopefully ) South tomorrow night.

I actually am doing great on my  eating this week.

I think I am to stressed to eat.

My house looks like a tornado hit it as I have stuff laid out everywhere to pack.

Yet here I am sitting at my computer blogging.

Very therapeutic you know!

I am packing my bathroom scale and my food scale and even one of my Leslie DVD’s. Oh I even am packing some lemon fluff! :)

I don’t want to come home next week with anymore (of me) than I left with. Hopefully I can leave some in Florida. But I will be happy just staying the same.

The place we are staying charges for internet so you probably won’t be hearing from me till I get home. ( I know I am cheap ) I think I can drive down the road though and get a little signal so I may be able to check up on everyone else.

Lunchtime

 

Does this look like the lunch of someone who is trying to lose weight? This a typical lunch that I pack when I head off to school to sub.

It actually is more than a lunch it’s some snacks too!

There of course is my favorite, broccoli in the green container, taco soup, pumpkin pie, lemon fluff, a vita top ( AKA  giant chocolate cookie ), Curves granola bar, homemade chips from no points tortillas, water, and punch. If I eat it all it is 6-7 points. ( The lemon and chips are supposed to be free but I always count them for something) the Broccoli is free!

This is usually my breakfast too. I eat something between 9:00 and 10:00 because it is just to early to eat for me before school. Plus I don’t have time to eat this all at lunch and still get to visit! :)

Now this isn’t the exact what I take every day but I always try to keep it under 8 points so I have enough for the rest of the day. I like to save some for after school so I can have a bigger snack too.

I love to SNACK after school!

This obviously takes some planning but it is worth the effort to not be tempted to eat junk at work and still feel content.

I haven’t posted a recipe for a while so here is a new favorite!!

Chicken, Rice and Veggie Casserole!

3lbs California blend vegetables chopped up

2 cups of chopped celery

1 large onion chopped

Cook the veggies together till tender (not mushy)

Then add

3-4 cups of chicken ( I use 2- 13 ounce cans with broth)

4 cups of cooked rice

3 cans 98% fat free cream of chicken soup

1 can 98% ff cream of celery soup

¾ cup light or fat free mayo ( I use fat free Miracle whip)

1 ½ tsp salt

3/4 tsp pepper

If the mixture seems a little dry you may add more chicken broth.

Put in pan and let set an hour before you bake.

Bake at 350 for 45 minutes to an hour

( This makes a larger than 9x13 pan)

You may put crushed up potato chips on top.

1 cup = 3 WW points ( without the potato chips)

This is so Yummy that it is worth the extra prep time! I wish I had a picture but it never lasts long enough to get one! ( Didn’t that sound better than I forgot or was too lazy!)

Well I am off to make some crust less strawberry pie and broccoli for tomorrow!

Diet Busters

 

Wow!

It has almost been a week since my last post.

Did you miss me? Ha!

I was very blessed to be able to sub every day this week.

Even though it was ISTEP week.

So I am sure that I along with numerous teachers and ISTEP takers are glad this week is behind us.

After a very trying weekend last weekend of trying to be good and not cheat when surrounded by all sorts of delicious food I decided to buckle down this week and get back on track!

So this little song about sums it up….

My favorite diet busters from the weekend!

(Sung to the tune My Favorite Things)

Pizza and Ham loaves, potato casserole and Flattop.

Carmel corn and chocolate, and lets not forget cheesecake.

Ice cream from DQ,  and pretzels galore these are the things that I need to ignore.

When the urge strikes, when I need bites, I must not relent.

They stay on my hips and my arms and my thighs

and are not easy to disguise!

I must workout, I must snack less, I must not give up.

My swimsuit is waiting, warm weather is near, It’s time to re-motivate myself this year!

I know very cheesy and not exactly perfect with the tune but I guess that is just who I am…

Cheesy and not perfect!

Which is why I find that I must constantly start each day with the attitude I will do better and I will stay on track and this week I did (Long week)  :)

Now if I can just get through another diet busting weekend!
